Vegetable Stir Fry

It’s summer and we are getting more fresh veggies. Throw them together with just a few other ingredients for an easy, flavorful stir fry.

This time of year is so exciting! With outdoor events, recreation, and barbecues, most of us have a full schedule with fun activities.

This season also brings TONS of fresh produce. So far, we’ve had snap and snow peas, lettuce, kale, spinach, cucumbers, radishes, broccoli, herbs, zucchini, yellow squash, cabbage, tomatoes, peppers, and much more.

It’s easy to eat most of these raw or throw them together in a salad, but a stir fry is also a super simple way to cook up tons of veggies. It’s also a great way to use up produce you may have in the fridge going bad. Just throw them all together in a pan with some broth (or water), add sauce, and serve it over rice, quinoa, or cauliflower rice.
