Recipe: Roasted Fennel with Tomato & Grated Cheese

Some people love fennel, some people hate it. This vegetable is in the carrot family and looks like a big, white bulb with green, feathery tops. Each part of the plant is edible!

The flavor of fennel is mild anise or licorice, but roasting it makes it more mellow and sweet.
